In the sentence “Die Mehrzahl der Texte ist hingehudelt.” What does „hingehudelt“ mean?

hingehudelt comes from hudeln, that means to work (or in this case write) slovenly

Okay, I guess that the ge- -t is a form of the past, but what about the hin-?

You're right about the ge- -t
The hin normally denotes the direction, "towards", but it's often used with words conntected to writing: "Er hat es dort hingeschrieben/hingemalt/hingeschmiert/hingekritzelt"
The direction in this case may be "onto the paper".
